Boil-Up — street food from Belize, Belize

A proper boil-up piles fish, boiled eggs, cassava, and plantain onto one plate and drenches all of it in the same tangy tomato-onion sauce, so nothing is served separately.

Fish or pig tail is boiled together with eggs, cassava, plantain, and yam, then topped with a tomato, onion, and sweet pepper sauce. Belize City vendors and Sunday cooks serve it heaped on a single plate.

Why it's made this way: Boil-up is considered Belize City's quintessential Creole comfort dish, rooted in the Creole communities that have shaped Belize District's food culture since colonial times.
