Conch Fritters

Belize enforces a strict conch season and size limit, so island vendors sometimes shut fritter stands down for months at a time to let the population recover.

Chopped conch meat is mixed into a seasoned batter with peppers and herbs, then deep-fried into golden fritters. Beach shacks on Caye Caulker and Ambergris Caye, both part of Belize District, serve them hot with dipping sauce.

Why it's made this way: Belize District includes the country's main cayes, where conch diving has long been a livelihood, making conch fritters the islands' signature beach snack.
