It's traditionally sold only in the early morning hours, roughly 4 to 10 a.m., specifically as a cure for the previous night's drinking.

Chunks of pork simmer in a fiery yellow broth of ground chili, corn and mint, served with hominy and chuño. La Paz market women ladle it into bowls at dawn from huge steaming pots.

Why it's made this way: Fricasé's early-morning market tradition and use of high-altitude chuño potato are particular to La Paz's Aymara-influenced food culture.
