Ambuyat is twirled onto a special forked bamboo tool called a chandas and swallowed rather than chewed — the sticky sago paste is almost flavorless on its own, so the taste comes entirely from the dipping sauce.
Ambuyat is a thick, glue-like paste made from processed sago palm starch, nearly tasteless by itself. Diners twirl it onto a bamboo fork and dip it into a sour, spicy sauce called cacah, usually alongside grilled or fried fish; widely regarded as Brunei's national dish.
