Bulgarian highway rest stops sometimes exist essentially because of one good mekitsa vendor — drivers treat them the way other countries treat a coffee stop.
Mekitsa is a flat, puffy piece of leavened dough stretched by hand and deep-fried until golden outside and airy within, then served hot dusted with powdered sugar or alongside sirene cheese and jam.
Why it's made this way: Made from just flour, yogurt, and oil, mekitsa was an easy dough to mix and fry to order, making it a quick, low-cost breakfast for travelers passing through early in the morning.
