It starts out completely non-alcoholic straight from the tree, and only turns into wine over the following hours as wild yeast in the air keeps fermenting it in the bottle.

Matango is tapped as fresh, sweet sap from palm trees, collected in gourds or bottles, and left to ferment naturally, growing stronger and more sour the longer it sits. It's sold fresh at roadside stands and local bars across Cameroon, especially along the coast.

Why it's made this way: It carries deep ceremonial weight in Cameroon, traditionally served at weddings, funerals, and initiation rites, making it far more than just a casual drink.
