It shares its origin story with the Barros Luco but honors a different politician, Ernesto Barros Jarpa — Santiago's sandwich counters essentially named their menu after 20th-century cabinet ministers.
Grilled ham and melted cheese are pressed together in a roll until the cheese runs, sold at the same counter-service 'fuentes de soda' as its beef cousin. It's a quick, cheap lunch for downtown Santiago workers.
Why it's made this way: Like the Barros Luco, this sandwich is a product of Santiago's early-20th-century sandwich-counter culture and carries a specifically Santiaguino political namesake.
