Often billed as 'the world's oldest hamburger' — the flatbread traces back over a thousand years, long before anyone put ground meat between two buns.

Slow-braised, chopped pork (stewed for hours in a broth of warm spices) is packed into a crusty, unleavened flatbread that's baked then griddle-charred until crisp outside and soft within.

Why it's made this way: Xi'an's baked, split-open bread let itinerant traders and travelers along old inland trade routes carry a full meal in one hand.
