It's eaten as much for its medicinal reputation as its taste — built around astragalus root and other ingredients believed to ward off cold.

A thick, savory-sweet stew combines mutton, lotus root, yam, astragalus root, and yellow rice wine, simmered into a warming, filling breakfast soup.

Why it's made this way: With over 300 years of history, the dish is tied to Fu Shan, a Ming-Qing era physician credited with designing it as both nourishment and cold-weather remedy.
