The 'big sausage' isn't sausage at all — it's a grilled log of sweet glutinous rice, shaped like a sausage, split open to hold an actual pork sausage inside.

A grilled cylinder of glutinous rice, often mixed with peanuts or red beans, is split lengthwise and wrapped around a grilled pork sausage, topped with pickled vegetables and sauce.

Why it's made this way: The dish plays on the visual and verbal pun of "sausage inside sausage," a common night-market habit turned into one object.
