Bubble Milk Tea (珍珠奶茶)

It was invented almost by accident in a Taichung tea shop in the 1980s when someone dropped tapioca balls into iced milk tea on a whim.
Bubble milk tea is a shaken, sweetened black tea with milk and chewy tapioca pearls at the bottom, sold from walk-up counters on nearly every street in Taiwan. Vendors shake each cup fresh to order, customizing sugar and ice levels to the customer's taste.
Why it's made this way: Taiwan's bubble tea shops turned a local invention into a global phenomenon now sold on nearly every continent.
