The two strands of dough twisted together are traditionally said to represent a corrupt 12th-century official and his wife — fried in oil as a form of public shaming.

A strip of leavened wheat dough is stretched, doubled, and pinched together, then deep-fried until it puffs into a long, hollow, golden-brown stick. Classically dunked in warm soy milk.

Why it's made this way: Folk legend ties the dish's name and shape to public anger at Southern Song chancellor Qin Hui, blamed for framing loyal general Yue Fei.
