The sausage takes its name from Santa Rosa de Osos, a single Antioquian town whose roadside grills along the Medellín–Caribbean highway turned it into one of the most recognized regional brands in Colombian food.
A coarse, garlicky pork sausage seasoned with scallion and cumin is grilled over open coals until the casing blisters. Truck stops and roadside stands sell it split open on a bun with arepa, hogao sauce, and lime.
