Tamal Asado

Despite its name, it isn't wrapped or steamed like a regular tamal at all — it's baked flat in a pan, closer to a dense cornbread than to any tamal shape.

Fresh corn is ground with cheese, butter, and sugar into a thick batter, poured into a pan, and baked until firm and lightly golden. Vendors at Guanacaste's cattle fairs and town fiestas sell it cut into squares.

Why it's made this way: The cake is one of the clearest markers of Guanacaste's corn-and-cattle culture, tied to the region's boyero (oxcart driver) festivals and its Chorotega-influenced corn cooking.
