Costa Ricans elsewhere in the country call their everyday rice-and-bean dish gallo pinto, but in Limón the near-identical-sounding 'rice and beans' is cooked in coconut milk and considered a completely different dish.
Red beans and rice are simmered together in coconut milk with thyme and a hint of chili until the rice turns a soft, pale coconut color. Comedores throughout Limón serve it as a daily plate alongside fried fish or chicken.
