Štrukli

The same dish can be boiled, baked, or both — Zagreb kitchens argue over which method makes a real štrukli, and menus often list all three.

Thin, hand-stretched dough is layered with fresh cottage cheese, sour cream, and egg, then rolled and either boiled or baked until the cheese turns creamy and the top browns. Small eateries around Zagreb's Dolac market, like the well-known La Štruk, serve little else.

Why it's made this way: Štrukli comes from the hilly Zagorje region just north of Zagreb and has become so identified with the capital that it's considered the city's signature dish.
