The pork is roasted whole for so many hours in garlicky sour-orange mojo that it's already falling apart before it ever touches the bread.

Shredded, slow-roasted pork marinated for hours in garlic-and-sour-orange mojo, piled onto crusty Cuban bread with little else needed. Roadside carts sell it fresh off whole pigs roasted over charcoal or in a caja china.

Why it's made this way: Roasting a whole pig is a communal, all-day event in Cuba, so pan con lechón became the everyday, portable way to keep working through the leftovers.
