Bramborák (Potato Pancake)

It's fried to order on the street specifically so the garlic and marjoram hit you while it's still sizzling.

A thick, savory pancake of grated raw potato, egg, flour, garlic and marjoram, fried on a flat griddle and sold hot off street carts and market stalls in Czech towns.

Why it's made this way: Bramborák grew out of turning cheap, abundant potatoes into a filling, inexpensive meal; the garlic-and-marjoram seasoning marks it as distinctly Bohemian.
