Frying actually mellows the cheese's notoriously strong smell, which is part of why it became the more crowd-friendly way to eat it out on the street.
Rounds of Olomouc's pungent curd cheese, breaded and deep-fried until the outside is crisp and the inside runs soft, served with tartar sauce and boiled potatoes or bread from Olomouc market stalls and street kitchens.
Why it's made this way: Frying cheese as a cheap meat substitute became popular in Czech lands in the early 20th century, and applying the trick to the region's famously strong local cheese turned it into a distinct Olomouc street specialty by the 1970s.
