Its name comes from an old dialect word for something 'deformed' — the story goes that the first ones were the burnt, misshapen loaves housewives couldn't sell as regular bread.
A large, round, flat sweet tart of yeast dough topped edge-to-edge with a single filling — plum butter, poppy seed, curd cheese, or fruit — baked and cut into wedges at markets across the Wallachian hills of eastern Moravia.
Why it's made this way: It grew out of mountain farmhouse baking in a poor, pastoral region, and today it's legally protected: to be sold as Valašský frgál, it has to be made in Wallachia and can't mix fillings on one tart.
