The name is a Dominican mangling of the English word 'johnnycakes,' brought over by English-speaking Caribbean laborers.

A thin disc of unleavened dough is deep-fried until crisp, bubbly, and golden. It's a beach-town staple, sold hot from stands along the shore in places like Boca Chica.

Why it's made this way: The recipe traveled with West Indian immigrant laborers who worked on Dominican plantations and railroads.
