The dough is made from green plantain mixed with ground peanuts, giving the fritter a naturally nutty crust unlike any other Ecuadorian snack.

Green plantain dough is stuffed with a peanut-and-fish filling, shaped into a torpedo, and deep-fried until crisp. Beachside vendors along Manabí's coast sell them hot in paper wrappers.

Why it's made this way: Manabí's coastal plantain and peanut farms, combined with its fishing villages, make corviche a dish that could only come from this stretch of coastline.
