Fiji's lovo wraps chicken, fish and root vegetables in banana leaves and buries them over hot volcanic stones — hosting one is such a big deal that 'having a lovo' is local shorthand for throwing a party.

Lovo is Fiji's earth-oven feast: chicken, pork, fish and dalo (taro) or cassava are wrapped in banana leaves, laid over stones heated in a pit fire, and left to slow-cook under earth and leaves for a few hours.

Why it's made this way: Like other Pacific earth ovens, lovo developed as a way to cook large shared meals for whole communities without pots or ovens, using heat retained in stone.
