These ring doughnuts are the unofficial food of Finland's biggest street party, Vappu (May Day), when they're traditionally dunked straight into a glass of homemade sima mead.
A cardamom-scented yeast dough is fried into rings or balls until golden, then rolled in sugar while still warm. Market stalls and bakeries sell them year-round, but they flood Helsinki's streets every April 30th for Vappu.
