These ring doughnuts are the unofficial food of Finland's biggest street party, Vappu (May Day), when they're traditionally dunked straight into a glass of homemade sima mead.
A cardamom-scented yeast dough is fried into rings or balls until golden, then rolled in sugar while still warm. Market stalls and bakeries sell them year-round, but they flood Helsinki's streets every April 30th for Vappu.
Why it's made this way: Vappu became Finland's biggest carnival-style street celebration, and the sweet, portable doughnut turned into its defining snack, eaten by the bagful on packed city streets.
