Socca

It's baked in giant copper pans over blistering wood fires and scraped off in ragged shards — no two pieces of socca ever look the same.

Socca is a thin, savory pancake of chickpea flour, olive oil, and water, poured into wide flat copper pans and baked until the edges char. Vendors scrape it into rough pieces, dust it with black pepper, and hand it over in paper cones.

Why it's made this way: Chickpea flour was a cheap staple in old Nice, and cooking it flat over blistering heat turned a humble batter into the city's defining street snack.
