This is the round, cheese-filled loaf most people picture when they hear 'khachapuri' — the open-boat Adjaruli style is actually the regional variant, not the other way around.

A round of dough is filled with a mix of imeruli and sulguni cheese, sealed completely, and baked until the crust is golden and the inside is molten. Bakeries across Imereti sell it whole or by the wedge, still warm from the oven.

Why it's made this way: Imereti is widely credited as the birthplace of khachapuri, and its closed, cheese-filled round shape remains the everyday version eaten across most of Georgia.
