The soft egg noodles are traditionally scraped straight off a board by hand — no pasta machine involved, just a knife and a practiced wrist.

Fresh egg noodle dough is scraped or pressed into boiling water, then layered with grated mountain cheese and caramelized onions, melted together in the pan. Festival food stands across the region serve it in a paper bowl as a filling, meat-free option.

Why it's made this way: The hand-scraping technique is a defining Swabian home-cooking skill, and its cheese-and-onion layering turns a simple egg noodle into a full meal.
