Unlike its sausage neighbor, this one skips the casing entirely — it's a whole slab of marinated pork neck grilled straight over the coals.

Pork neck steak is marinated for a day or more in oil, onion, paprika, and caraway, then grilled directly over charcoal until charred at the edges. Thuringian grill stands sell it in a roll alongside Rostbratwurst as the heartier option on the menu board.

Why it's made this way: The long marinade tenderizes a cheaper, well-worked cut of meat, a practical habit from a region where the sausage-grilling tradition runs deep enough to extend to other cuts.
