Suaasat

There's no single recipe — it's made with whatever the hunt brought home that week, seal, whale, reindeer, or seabird, so the same bowl tastes different from one household to the next.

Suaasat is a peppery soup built from seal, whale, reindeer or seabird meat, simmered for hours with rice or barley, onions, and a heavy dose of black pepper and bay leaf until the meat falls apart. It's cooked in nearly every Greenlandic home and served at community gatherings, warming enough for a country where fresh vegetables barely grow.

Why it's made this way: With almost no arable land, Greenlandic cooking has always been built around whatever the hunt provides rather than what's planted, and suaasat is that logic in a single pot — a soup with no fixed recipe because the ingredients were never guaranteed.
