Atol de Elote

It's thickened with nothing but blended fresh corn kernels — no added flour or starch — so the body comes entirely from the corn itself.

Atol de elote is a warm, sweet drink made by blending fresh corn kernels with milk, cinnamon, and sugar, then gently cooking the mixture until it thickens slightly. Street vendors ladle it from large pots into cups at markets and evening street-food stalls across Guatemala, especially in the cooler highland towns.

Why it's made this way: As one of many corn-based atoles rooted in Maya food tradition, it reflects how central maize remains to daily Guatemalan life, served here as comfort food in liquid form.
