The dish's messy name supposedly comes from a school principal warning students not to buy "dirty" food from a cart outside — the insult became the dish's proud nickname.

A shuco starts with a toasted bolillo roll stuffed with grilled sausage or chorizo, then piled high with guacamole, cooked cabbage, mustard, and salsa. Vendors grill the meat right at the cart on busy Guatemala City street corners.

Why it's made this way: Hot dogs arrived in Guatemala with European immigrants, but street vendors reworked the format with local ingredients like guacamole and cabbage.
