The word 'tostada' means something totally different here than in Mexico — in Guatemala it's a flat-fried corn tortilla piled with tangy cooked tomato sauce, cabbage, and crumbled cheese.

Guatemalan tostadas are small corn tortillas fried until crisp, then topped with cooked tomato sauce, mashed avocado, or refried black beans, finished with shredded cabbage and crumbled queso seco. Sold from street carts and market stalls alongside shucos and chuchitos.

Why it's made this way: Corn has anchored Guatemalan cooking since Maya times, and frying leftover tortillas flat rather than folding them let street vendors turn day-old tortillas into a cheap, fast, topping-friendly snack.
