Dobos Torta

Its inventor topped it with a shell of hardened caramel for a very practical reason: in an age before reliable refrigeration, that glassy caramel cap was what kept the cake fresh enough to ship in wooden crates to other countries.

Thin layers of buttery sponge cake stacked with chocolate buttercream and finished with a hard caramel top cut into wedges, sold by the slice from bakery counters and market halls across Budapest.

Why it's made this way: Pastry chef József Dobos created it in 1884 and unveiled it at Budapest's 1885 National General Exhibition, where it reportedly won praise from Emperor Franz Joseph and Empress Elisabeth — instant royal approval that helped it become a national icon almost overnight.
