"Ital" cooking deliberately avoids salt, and many Rastafari vendors in Kingston use no processed seasoning at all, relying only on scallion, thyme, and coconut milk to flavor the pot.

A hearty vegetable stew of pumpkin, callaloo, okra, and root vegetables is simmered in coconut milk without salt or animal products, ladled from pots at small Rastafari-run stands around Kingston.

Why it's made this way: Kingston is home to a large, visible Rastafari community, particularly around areas like Papine and Bull Bay, whose ital food philosophy shaped this dish into a specifically urban Kingston street offering.
