Jallab

The dark syrup is made from grape molasses, dates, and rosewater — but the drink's real signature is the handful of pine nuts and raisins that sink to the bottom of the glass.

Jallab is a dark date- and grape-molasses syrup diluted with cold water and rosewater, poured over crushed ice and topped with pine nuts and raisins. Street vendors in Beirut sell it from big glass jugs, especially through the hot summer months and Ramadan evenings.

Why it's made this way: It's one of the most recognizable Levantine street drinks, associated with beating Beirut's summer heat and breaking the Ramadan fast alike.
