Malaysia's national dish began as a portable banana-leaf breakfast, not a restaurant meal.

Why it's made this way: The dish likely took shape near Malacca, a historic trading port where coconuts and dried anchovies were both cheap and plentiful, making a compact, energy-dense parcel that laborers could carry to work wrapped in a leaf.
