The classic filling pairs shredded Edam cheese with Nutella or cajeta, an odd-sounding sweet-and-savory combination that's become a beloved Yucatán street-cart obsession.

A thin wheat crepe is cooked crisp on a specialized cart griddle, filled with shredded Edam cheese and sweet cajeta or chocolate spread, then rolled up like a cigar. Evening street carts in Mérida's parks sell them fresh off the griddle.

Why it's made this way: Marquesitas were invented in Mérida and remain almost exclusively a Yucatán street-cart specialty rarely found in other Mexican regions.
