Fryske Dúmkes

Their name literally means 'little thumbs' in Frisian, a nod to their small, stubby shape.

A dough of flour, aniseed and spices is studded with chopped almonds, shaped into short thick fingers, and baked until firm and lightly crisp. Bakery stalls at Frisian markets sell them by the bag as a keeping-well travel snack.

Why it's made this way: As a dense, long-lasting spiced biscuit, it developed as practical food for Frisian farmers and traders to carry to market and eat on the road.
