Oranjekoek

Despite the name, there's no orange fruit in it at all — the color and name nod to the Dutch royal House of Orange, not the citrus.

A dense, spiced cake batter is baked between two thin layers of pastry, topped with a bright pink or white sugar glaze, and sold sliced from Frisian bakeries and market stalls. The pink icing is the giveaway that marks it out from other Dutch spice cakes.

Why it's made this way: It's tied to celebrations of the Dutch royal family, and Frisian bakers kept the tradition alive as a distinctly local specialty.
