Vendors along the Rivas highway roast whole pigs each morning and display them on the counter, carving portions to order for drivers who stop without even leaving their cars.

A whole pig is slow-roasted until the skin turns crackling-crisp, then chopped and served over boiled yuca with pickled onion-and-cabbage curtido. Roadside comedores along the Pan-American Highway through Rivas department sell it as a drive-by staple.

Why it's made this way: Rivas sits on the main highway corridor between Managua and the Costa Rican border, and its roadside stands have built a national reputation specifically around this stretch of road.
