The Sami have herded reindeer across Arctic Norway for centuries, and this creamy sautéed reindeer dish is one of the clearest living threads of that food culture still served today.
Thin-sliced reindeer meat is browned in butter and simmered briefly in cream, then served over mashed potatoes with lingonberries and pickles. It's sold at markets and tourist food stalls in Tromsø, Alta, and other northern towns.
Why it's made this way: Reindeer herding is central to Sami livelihood across the Arctic north, and quick-searing thin cuts of meat let herders cook efficiently with limited fuel.
