The dorado's fighting strength earned it the nickname 'the tiger of the river' among the sport fishermen who flock to the Paraná near Ciudad del Este specifically to catch it.
Fillets of golden dorado, a prized river fish, are lightly battered and fried until crisp, served with lemon at riverside eateries near the Itaipú reservoir. It's a common catch-of-the-day option for fishermen and visitors alike.
Why it's made this way: Alto Paraná's stretch of the Paraná River and the vast Itaipú reservoir make it one of Paraguay's prime dorado fishing grounds, feeding the department's riverside food stalls.
