Ciudad del Este's massive duty-free shopping district draws shoppers from three countries, and Arab-run shawarma stands have become as much a fixture there as the electronics stalls themselves.
Marinated meat is stacked on a vertical spit, roasted, and shaved into flatbread with garlic sauce, pickles, and vegetables. Stalls throughout Ciudad del Este's commercial center sell it wrapped to go for shoppers on the move.
Why it's made this way: The dish's presence is a direct result of Alto Paraná's Lebanese and Syrian community, concentrated in Ciudad del Este's border-trade economy.
