The syrup is boiled down from cane juice in the same open kettles used for over a century at Guairá's traditional sugar mills, with barely any change in method.
Sugarcane juice is slow-boiled into a thick, dark syrup, bottled and sold at markets around Villarrica. It's drizzled over mbeju, pancakes, or simply stirred into drinks as a natural sweetener.
