A full plate traditionally combines roast guinea pig, dried llama jerky, chicken, Pacific coast seaweed and toasted corn — ingredients from the Amazon, the Andes and the ocean all on one Cusco plate.

A composed cold platter of roast guinea pig, chicken, cecina (dried meat), toasted corn, seaweed and a corn tamale is served together at room temperature. Vendors set up folding tables around Cusco's main square, especially during the Corpus Christi festival.

Why it's made this way: The dish is inseparable from Cusco's Corpus Christi celebration, when it is sold almost exclusively on the streets surrounding the cathedral.
