The dish is traditionally made with carne seca, beef hung to cure in the sun on rooftops around Piura's rural towns before it's ever cooked.

Green plantains are mashed and cooked with shredded dried or fresh beef, garlic and cilantro into a thick, savory stew. Piura's street stalls serve it with rice and a fried egg on top.

Why it's made this way: The dish depends on Piura's arid-zone method of sun-drying beef combined with local plantain farming, distinct from coastal ceviche-focused cuisine further south.
