You'll hear it before you see it — vendors announce themselves with a drawn-out cry of 'Tahooo!' echoing down the street.

Warm, silken soybean curd is layered with brown-sugar syrup (arnibal) and chewy tapioca pearls (sago), then ladled into a plastic cup on the spot. Roving vendors called magtataho carry two metal vats balanced on a wooden yoke, walking fixed routes through neighborhoods every morning.

Why it's made this way: The dish descends from Chinese douhua, brought over by Chinese immigrant traders and localized into a cheap, portable breakfast that could be sold door-to-door while still warm.
