Turon

Turon is essentially a dessert reinvention of the savory Chinese-style lumpia wrapper — vendors dredge the banana in sugar before rolling, so the wrapper caramelizes into a brittle, almost candied shell as it fries.

Slices of ripe saba banana, sometimes tucked alongside a strip of sweet jackfruit, are rolled tight in a thin lumpia wrapper and shallow-fried until the outside turns deep golden and crackly. Street carts often finish the frying with a spoonful of sugar in the oil so the wrapper glazes into a caramel shell.

Why it's made this way: It grew out of the Hokkien-Chinese spring roll tradition brought by immigrant traders, with Filipino cooks swapping the savory filling for bananas and sugar to turn it into a cheap, portable afternoon treat.
