Lángos

Vendors swear reused frying oil ruins the puff — each batch is meant to fry in fresh oil, nothing else.

A disc of yeasted potato dough is deep-fried until golden and blistered, then piled with sour cream, grated cheese, and garlic. It's sold hot from cart windows at Transylvanian markets and Hungarian-community festivals.

Why it's made this way: Lángos followed Hungarian settlers into Transylvania and stayed a staple of the region's mixed Hungarian-Romanian market culture, distinct from anything found in the rest of Romania.
