This East African staple traces back to Indian traders, yet it's now so at home in Rwanda that most people assume it's local.

Vendors fry thin, soft flatbread on a flat griddle, often in ghee, then serve it plain with tea or stuff it with eggs, vegetables, and meat rolled up like a wrap. It's sold from roadside stalls throughout the day, especially at breakfast.

Why it's made this way: Chapati arrived in East Africa with Indian laborers and traders in the 19th and 20th centuries and was adapted with local ingredients, becoming a fixture of everyday Rwandan street eating.
